Shirley and I took her parents on the Nantahala Gorge Excursion a few years ago. We went in late Oct when the leaves were changing and it was great. I can remember going over the bridge in the photo over Fontana Lake/Little Tennessee. It was well worth the time and money.
Rafting on the Nantahala is fun too. When Shirley and I had whitewater kayaks back in the late 80s/early 90s, we were up there several weekends each year. The Nantahala is a fun river that you can raft without a guide. We always stayed at the Lost Mine Campground.

x2 on the Nantahala, not super extreme but just plain fun and really challengening in a canoe. But good grief is that water cold
